Red Quinoa Granola

Here's a better and healthy way to enjoy a handful of granola. Much of store-bought granola is full of corn syrup sweeteners and fillers, but this recipe uses maple syrup and honey instead. This recipe is high in fiber, protein and flavor. Feel free to add extra grains or dry fruit. Add a crunch to your morning oatmeal, parfait or yogurt with this protein and fiber filled mix.

Ingredients:

1/4 cup vegetable oil (coconut oil)

1/2 cup maple syrup

1/3 cup honey

2 tsp cinnamon

1/8 tsp salt

1/3 cup pecan (halves or pieces)

1/3 cup slivered almonds

1/2 cup pumpkin seeds

1/2 cup dry blueberries

1/2 cup dry cranberries

1/2 dry green or red raisins

1 cup red quinoa

3 cups rolled oat (do not use quick cook)

Let's do it!

  1. Preheat oven to 325°F

  2. Mix oil, honey, cinnamon, salt and maple syrup in one bowl

  3. Now mix oats, nuts, seeds and red quinoa ingredients in large separate bowl

  4. Combine both mixtures and pour onto baking sheet, making a thin layer of mix

  5. Place in oven and mix every 15mins for even color and bake

6. Remove from oven after 45 to 60mins—oats should show a bit of darkening, which means it is ready to be removed from the oven

7. Let oats cool down by removing it from hot baking sheet (oats will harden after they are cooled down)

8. When completely cooled down, mix in dry berries, dry fruit and raisins, making the best granola you have ever had!
